Sausage Equipment

A sausage is meat, salt, and a decision — but the decisions you can make are set by the tools on your bench. This section is the whole kit, from the knife that came before every machine to the grinder everything depends on, the stuffer, the smoker, the drying chamber almost no recipe tells you about, and the small tools that actually make or break a batch. I've spent forty years assembling a bench one piece at a time, breaking things and fixing them, and even building a rig or two of my own. Here's what each tool is for, how it works, what the history books get right and wrong about it — and, at the end, my own bench, laid out honestly.
