My Bench
Forty years buys you a bench. Not all at once — one piece at a time, each one bought or built to solve a specific problem that the last setup couldn’t, usually the morning after a batch went wrong. This is the actual kit I make sausage on, laid out honestly: what each thing is, why I have it, the couple of pieces I modified or built myself, and — because a bench is defined as much by its holes as its tools — the gaps I still haven’t filled.
I’m not going to tell you that you need any of this to start. You need a grinder, a way to stuff, a way to hold temperature, and a scale. Everything past that is forty years of chasing better. But if you’re curious what a working sausage bench looks like after that long, here it is.
The grinder — a Weston #12
The machine everything starts with is a Weston #12 grinder — model 10-1201, a 1-horsepower, 750-watt motor. (Weston, not Walton’s — people mix the two up constantly, and I’ve corrected that mistake enough times that I say it out loud now.) A #12 is a serious home grinder: the “#12” is the throat-and-plate size, and it’s the point where a grinder stops being a kitchen gadget and starts being a tool that’ll grind a deer without complaint. One horsepower is enough to pull coarse-cubed pork butt through a fine plate without stalling or, worse, warming the meat up while it struggles — and keeping the meat cold is the whole game, so a grinder that bogs down is actively working against you.
I run it with a full set of plates, and I keep a chart of which plate does which job taped where I can see it — that chart, and the whole story of the worm, the knife, and why a dull one smears fat, is on the grinder and plates and knives pages. The short version of how I use it: start cold — my rule is meat at about 30°F, half-frozen, before it ever touches the grinder — and match the plate to the product.
The mixer — a Vevor BMM-10
For years I mixed by hand, and for years my hands paid for it. Mixing sausage is where you develop the primary bind — you work the ground meat and the cure and a little liquid until the proteins get tacky and the whole mass turns sticky and holds together — and doing that by hand in a cold bowl is miserable, slow work that also warms the meat up with your own body heat, which is exactly what you don’t want.
So I bought a Vevor BMM-10 — a hand-crank meat mixer, 10-liter / 15-pound capacity. It’s not motorized and it doesn’t need to be; the geared paddles do in a couple of minutes what used to take me ten, and they do it without my warm hands in the bowl. The trick I use: I freeze the mixer parts — the tub and the paddles go in the freezer ahead of time — so the meat actually gets colder while it mixes instead of warmer. It mixes more evenly than I ever did by hand, and the bind comes up better for it. If you’re still hand-mixing and your batches sometimes come out crumbly, this is the upgrade I’d point you at first.
The stuffer — an F. Dick I motorized myself
This is the piece I’m proudest of, because I didn’t just buy it — I built onto it.
The stuffer is an F. Dick TWF-15, a 15-liter / 30-pound vertical piston stuffer. F. Dick (Friedr. Dick, the old German tool house) makes serious gear, and a real vertical stuffer is a completely different animal from stuffing through the grinder — it pushes the farce into the casing with a piston instead of re-grinding it through a worm, so it doesn’t smear the fat and it doesn’t whip in air. But here’s my problem with every crank stuffer: you only have two hands. A vertical stuffer wants one hand cranking and both hands guiding the casing as it fills, tending the links, keeping the pace even — and that’s three hands’ worth of job. So I designed and added a foot-pedal-controlled motor to the TWF-15. Now I drive the piston with my foot and keep both hands on the casing, feeding it off the horn, controlling the fill, tying and linking as it goes. It’s the single best modification I’ve ever made to a piece of sausage equipment, and it turned the most awkward step in the whole process into something smooth. If you make a lot of sausage and you’ve got a manual stuffer, hands-free feed is worth every bit of the effort to rig it up.
The jerky cannon — an LEM
A small tool that earns its shelf space: an LEM Jerky Cannon. It’s a caulk-gun-style piston tube, and it’s obviously made for pressing out ground-meat jerky sticks — which it does perfectly. But the reason I love it for sausage is that it’s the easiest way I know to shape a caseless sausage. When I make ćevapi — those little skinless Balkan sausages that are one of my favorite things to eat — the cannon extrudes perfect, even logs of the farce with no casing at all, faster and more uniform than rolling them by hand. Any time a recipe calls for a skinless link or a formed stick, the jerky cannon is the shortcut.
The smokers — five of them, and why
Smoking is a big enough part of what I do that my smokers have their own full write-up, so I’ll keep this short and send you there. I run five smokers plus wireless probes, and each one does something the others can’t: two SmokinTex electric cabinets that I modified with PID controllers and RTD probes so they hold a temperature within a few degrees for hours (that precision is everything for a cooked-and-smoked sausage that has to hit a safe internal temperature); a large offset for when I want to run a real fire; a stainless grill with a pellet cold-smoke tube; and a cold smoker I built myself around a Smoke Daddy generator, mainly for cheese and lox. The one sausage-specific thing worth repeating: when I smoke a sausage I start low and dry the surface first — around 120°F for a hog product, dampers open, no water pan for the first hour — because smoke won’t stick to a wet casing and you’ll get a streaky link. That thermal-processing logic came out of years of doing it wrong.
The hot-water finish — from a turkey roaster to a sous-vide bin
Here’s a piece of the bench that evolved. For a lot of sausages — my grandfather’s kielbasa is the one I’ve made most — I finish the links in a hot-water bath rather than pushing the smoker hotter, because a gentle water bath brings the sausage up to a safe internal temperature without blowing the fat or wrinkling the casing. For years I did this in a turkey roaster: fill it, hold it at 165°F, drop the links in until they hit 160°F inside. It worked well for a long time, and if that’s all you’ve got, it’s genuinely fine.
But a turkey roaster’s thermostat is a rough thing, swinging around its setpoint. So I upgraded: now I run a large bin with a sous-vide immersion heater in it. The immersion circulator holds the water at a precise, steady temperature and moves it gently, so every link finishes in identical conditions and I’m not babysitting a swinging dial. Same method, far better control — and it’s a nice example of how the bench improves: you don’t throw out the idea, you find a more precise way to do the same thing.
The probes — a Meater, four channels
Whatever I’m cooking or smoking, I watch it with a Meater and its four wireless probes, each reading both the internal meat temperature and the ambient temperature with no wires trailing out of the smoker. For a cooked sausage the internal temperature is the safety step, so being able to see all four links on my phone and know the instant one hits 160°F — without opening a door and losing heat — is exactly the kind of precision that turns “probably done” into “done, verified.” The case for measuring instead of guessing is on thermometers and scales.
The small stuff that makes or breaks a batch
The unglamorous tools I’d never work without:
- Hog rings and hog-ring pliers — for crimping the ends of fibrous casings closed. A summer sausage in a pre-stuck fibrous casing gets a hog ring on the open end and it’s sealed clean; no fumbling with string.
- A range of stuffing horns/tubes — including a 12 mm tube for the 19–21 mm snack-stick casings, matched to the caliber I’m running. The casings and their tools page gets into caliber matching.
- Good scales — the kind that read to a hundredth of a gram, because the moment cure is in the recipe, weighing by eye is not a thing you get to do. More on why on the scales page.
- My spice source — I buy a lot of my seasonings from PS Seasoning, and I keep it minimal alongside the fresh garlic and fresh herbs I actually prefer.
The honest gaps
A bench is defined by what it doesn’t have too, and I’ll be straight about mine.
I do not yet have a dedicated curing-and-drying chamber — a temperature- and humidity-controlled box for dry-cured sausage — and I don’t have a psychrometer to measure relative humidity properly. That’s the real hole in my kit, and it’s not a small one: it’s the exact gap I point at on the curing and drying chambers page, because almost no home recipe even tells you the chamber matters, and the truth is that controlled temperature and humidity is what separates a reliable dry-cured stick from a gamble. I can hot-smoke and cook a sausage to a verified temperature all day long. Building the box that would let me reliably dry-cure a raw Landjäger or a salami to a safe water activity is the next real upgrade on my list. I’ve done it by feel and by weight loss and by watching it like a hawk; I’d rather do it by numbers.
That’s the honest bench: a serious grinder, a mixer that saved my hands, a stuffer I motorized myself, five smokers, a hot-water rig I keep improving, wireless probes, and a curing chamber I still owe myself. Forty years, one problem at a time.
