Coffee Shop & Bakery

The brick-and-mortar heart of the whole plan: a neighborhood coffee shop and artisan bakery under one roof. Standard drip to Cuban and Vietnamese coffee, flavored lattes and teas on the café side; sourdough, bagels, croissants, cookies and jam on the bakery side. And we keep our own bees — the honey sweetens the lattes, the breads and most of our jams, and the counter carries the whole line of the hive, from jars of raw honey to beeswax candles, propolis and balms. Coffee’s margin funds the bakery’s labor, the bread draws the coffee crowd, and the whole thing doubles as the licensed commissary that puts my food truck on the road. This is how I’d build it — the concept, the coffee, the honey, the ovens, the ingredients, and exactly what it costs.
