Canning Them
I have never canned boiled peanuts. I have been buying them in jars at the Piggly Wiggly for thirty years and I want to make my own, so this page is me learning it properly rather than reporting something I already do.
Two things came out of the research that I did not expect. One is that there is a real, tested, research-based procedure — and it is the only nut product the USDA-backed authority still supports. The other is that my own canning recipe has been over-processing by forty minutes.

🔴 First, the rule that has no exceptions
Boiled peanuts are a low-acid food. They must be pressure canned. A boiling-water bath will not work and is dangerous.
There is no acid in a boiled peanut and no fermentation. Water-bath canning tops out at 212 °F (100 °C), which is not hot enough to destroy Clostridium botulinum spores. A sealed jar of wet, low-acid, room-temperature food is the exact environment those spores germinate in.
- ❌ Boiling-water bath — cannot reach the temperature. Never.
- ❌ Instant Pot / electric multicooker — a pressure cooker, not a pressure canner. It cannot be validated to hold a canning pressure and is not approved for canning low-acid foods.
- ❌ Oven canning, dishwasher canning, inversion sealing — all of it. No.
- ✅ A dial-gauge or weighted-gauge pressure canner. This and nothing else.

⭐ Worth knowing how unusual this is: NCHFP has withdrawn its procedures for canning nut meats generally — green peanuts are the single exception they still publish. If you were wondering whether boiled peanuts are a serious enough tradition to have earned research-based process authority, the answer is that they are the only nut that has.
The peanuts
Fully mature, green peanuts. Both halves matter — full-size and developed, but undried. Not immature, not dried-raw. See Green, Raw, or Just Dry.
The method
- Clean and wash the peanuts.
- Soak in fresh water for 1 hour. Discard the water.
- Cover with fresh water, soak 1 hour. Discard.
- Cover with fresh water, soak 1 hour. Discard. → Three hours total, fresh water each time.
- Parboil 10 minutes in fresh water. Drain.
- Pack hot into hot jars, leaving ½ inch headspace.
- Fill to ½ inch from the top with boiling brine — 1 cup of salt per gallon of water.
- Remove air bubbles, wipe the rims, adjust lids.
- Process in a pressure canner per the tables below.
⚠ The triple soak is not optional and it is not about flavor. Peanuts carry field soil and surface starch, and three changes of water is how the tested process deals with that before the jars are sealed. Skipping it changes the product the process was validated on.

🔴 Check your own elevation. I’m in Michigan and most of the Lower Peninsula sits under 1,000 feet, which puts me on the 10 lb weighted-gauge line — but that is my kitchen, not a general rule, and the difference between 10 and 15 lb is the difference between a safe jar and an unsafe one. Look it up for where you actually are.
🔴 A correction to my own recipe
My existing Peanuts, Boiled, Canned follows NCHFP exactly on the parts that matter most — three soaks, ten-minute parboil, ½ inch headspace, one cup of salt per gallon of brine. It is clearly derived from the tested process.
And then it says: 10 pounds of pressure for 90 minutes.
The tested quart process is 50 minutes.
To be clear about what kind of error this is: it is not a safety problem. Ninety minutes at 10 lb comfortably exceeds the lethality the process requires. If you have canned peanuts this way, your jars are fine. Erring long is the safe direction to err, and I would much rather find this mistake than its opposite.
But it is forty extra minutes of retort-temperature cooking on a food whose entire virtue is texture. Peanuts that went into the jar creamy come out closer to paste. I have been wondering for years why my home-canned ones never matched the jarred ones from the store, and I think this is simply the answer.
I’ve updated the recipe to the tested times. The old numbers are noted in the recipe’s Notes, with why — a correction is worth more than a silent edit.
⚠ The general lesson, which I keep relearning: if a canning recipe’s times don’t match the tested process, find out which direction the discrepancy runs before you do anything. Longer than tested is a quality problem. Shorter than tested is a botulism problem. They are not symmetrical, and they should not be treated with the same shrug.
What a jar is actually for
⭐ A pressure canner and a Chinese retort pouch are the same technology at different scales — seal the food, then take it above the boiling point of water for long enough, under pressure, to achieve commercial sterility. The pouch is a can that bends.
Which is why the shelf at the Piggly Wiggly and the bag from Shandong are solving an identical problem, and why the Beaufort bar’s little fridge was the low-technology branch of the same decision tree.
If you’d rather not
Freeze them. Genuinely — for home use, freezing preserves the texture better than canning does, needs no special equipment, and carries none of the risk. Canning earns its place when you want a shelf-stable jar: a pantry, a boat, a gift, a hunting camp, or the simple pleasure of a row of jars you made.
That last one is a perfectly good reason, and it’s mine.
