Za'atar Roasted Chicken

Za’atar and olive oil create one of the most aromatic and satisfying chicken preparations in Mediterranean cuisine.

Ingredients

  • 1.5 lbs boneless chicken thighs or breasts
  • Za’atar spice blend: 2 tbsp dried thyme, 1 tbsp sumac, 1 tbsp sesame seeds, 1/2 tsp salt, 1/4 tsp cumin (or use store-bought)
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper
  • Lemon wedges

Directions

Mix za’atar with olive oil and garlic.

  1. Coat chicken thoroughly with za’atar mixture. Marinate 30 min or up to overnight.

Preheat oven to 425°F or heat a grill.

  1. Roast or grill chicken 12-15 min per side until cooked through and fragrant.
  2. Rest 5 min. Serve with lemon.

Notes

Za’atar is one of the most beneficial spice blends in Mediterranean cooking — thyme, sumac, and sesame provide antioxidants, vitamin C, and healthy fats respectively.
