Ingredients

  • 3 lbs chicken parts
  • 16 cups of water
  • 1 teaspoon white peppercorns
  • 1 1-inch piece of ginger, flattened
  • 1 Tablespoon salt

Directions

  1. Pour the water over the chicken in a large pot and bring to a boil. Reduce heat to medium low, stir in the rest of the ingredients, and simmer, skimming occasionally, for 2 hours. Strain, then remove the fat.
