Vietnamese Chicken Stock (Nuoc Dung Ga)
Ingredients
- 3 lbs chicken parts
- 16 cups of water
- 1 teaspoon white peppercorns
- 1 1-inch piece of ginger, flattened
- 1 Tablespoon salt
Directions
- Pour the water over the chicken in a large pot and bring to a boil. Reduce heat to medium low, stir in the rest of the ingredients, and simmer, skimming occasionally, for 2 hours. Strain, then remove the fat.
