A complete vegetarian meal that feels indulgent but is remarkably healthy.

Ingredients

  • 4 cups cauliflower rice
  • 3 eggs, beaten
  • 1 cup frozen peas and carrots
  • 1/2 cup corn (optional)
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • White pepper to taste

Directions

  1. Heat oil in a large wok or skillet over high heat.
  2. Add garlic and ginger, stir 30 seconds.

Add peas, carrots, and corn. Stir-fry 3 minutes.

  1. Add cauliflower rice. Stir-fry 4-5 minutes until slightly golden.
  2. Push everything to the sides. Add beaten eggs to center, scramble, then mix in.
  3. Add soy sauce and sesame oil. Toss well. Season with white pepper.
  4. Top with green onions.

Notes

Cook over maximum heat for best texture. Moisture is the enemy — keep it moving.
