Vegetable and Egg Fried Cauliflower Rice

A complete vegetarian meal that feels indulgent but is remarkably healthy.
Ingredients
- 4 cups cauliflower rice
- 3 eggs, beaten
- 1 cup frozen peas and carrots
- 1/2 cup corn (optional)
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- White pepper to taste
Directions
- Heat oil in a large wok or skillet over high heat.
- Add garlic and ginger, stir 30 seconds.
Add peas, carrots, and corn. Stir-fry 3 minutes.
- Add cauliflower rice. Stir-fry 4-5 minutes until slightly golden.
- Push everything to the sides. Add beaten eggs to center, scramble, then mix in.
- Add soy sauce and sesame oil. Toss well. Season with white pepper.
- Top with green onions.
Notes
Cook over maximum heat for best texture. Moisture is the enemy — keep it moving.
