Two Minute Chocolate Chip Cookie for One
Ingredients
- 2 Tbsp Unsalted Butter (softened)
- 1 1/2 Tbsp White Sugar
- 1 1/2 Tbsp Brown Sugar
- 2 Tbsp Beaten Egg (about 1/2 large egg)
- 1/4 Tsp Vanilla Extract
- 5 Tbsp All Purpose Flour
- 1/4 Tsp Baking Soda
Pinch of Salt
- 1/4 Cup Chocolate Chips
Directions
- Place the butter and sugars in a 2-cup bowl or ramekin. Use a fork to combine.
- Beat an egg and add two tablespoons of the egg mixture into the bowl. Add the vanilla, stir to combine.
- Add the flour, baking soda and salt. Give it another good stir.
Finally, stir in the chocolate chips.
- Save a few for the top, if you would like. I do!!!
- Now put the mixture into the microwave and let it bake for about 2 minutes on high. This may take a bit of experimentation to get just right. I like to use 70% power and let it go about 2 1/2 minutes.
- Now go enjoy your personal cookie and a good book :-)
Notes
OK, so you are sitting at home by yourself. It’s cold and raining outside. You have a great book to read in your comfy reading chair but one thing is missing. What could it be? A glass of wine? Well, sometimes that hits the spot but tonight how about a big chocolate chip cookie topped with a scoop of vanilla ice cream. YES!!!
