Turkey Meatballs with Zucchini Noodles

Comfort food without the blood sugar spike. The meatballs can be made in big batches and frozen.

Ingredients

  • 7 oz 93% lean ground turkey (for meatballs)
  • 1 egg, beaten
  • 2 tbsp grated Parmesan
  • 1 tsp Italian seasoning
  • 2 cloves garlic, minced
  • 2 medium zucchini, spiralized
  • 1 can (25 oz) marinara sauce (no added sugar — check label)
  • Salt, pepper, red pepper flakes

Directions

  1. Combine turkey, egg, Parmesan, Italian seasoning, garlic, salt, and pepper. Form into 12–14 meatballs.
  2. Heat oven to 400°F or pan-fry meatballs in 1 tbsp olive oil, 3–4 min per side until browned.
  3. Transfer to oven-safe pan, pour marinara over meatballs, bake 15 minutes.
  4. While meatballs bake, sauté zucchini noodles over high heat 2–3 minutes.
  5. Plate zucchini, top with meatballs and sauce, garnish with Parmesan.

Notes

Meatballs freeze beautifully — make a 4× batch, bake all of them, and freeze in portions with sauce. A complete dinner from frozen takes 8 minutes in the microwave.
