Turkey Lettuce Tacos

All the taco flavor, none of the tortilla carbs. Fast weeknight meal.
Ingredients
- 1.5 lbs 93% lean ground turkey
- 1 head butter lettuce, large leaves separated
- 1/2 cup salsa (fresh pico preferred)
- 1 avocado, sliced
- 2 tbsp plain Greek yogurt (as sour cream)
- 1/4 cup shredded reduced-fat cheddar
- 1 lime
- Taco spices: 1.5 tsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, 1/4 tsp onion powder, salt
Directions
- Cook turkey in a skillet over medium heat, breaking apart, until browned.
- Add taco spices and 1/4 cup water. Stir and cook 3-4 minutes.
Stack 2 lettuce leaves per taco for sturdiness.
- Fill with seasoned turkey. Top with salsa, avocado, cheese, and Greek yogurt.
- Squeeze lime juice over everything.
Notes
Bibb (butter) lettuce makes the strongest cups. Use 2 stacked leaves to prevent tearing.
