Sugar-Free Blueberry Jam

Ingredients
- 380g (2 cups) blueberries (fresh or frozen)
- 50g (¼ cup) granulated sweetener (Erythritol, Monkfruit, Swerve)
- 1 tbsp lemon juice
- 2 tbsp water
- 4.5g (1½ tsp) gelatin powder
Directions
- In a saucepan, over a medium heat, combine the blueberries, granulated sweetener, lemon juice and water and bring to a boil.
- Reduce the heat to a low-medium, and simmer for 10 minutes.
- Mash the blueberries, with a potato masher, until they have broken down.
- Remove the saucepan from the heat and mash in the gelatin powder, for about 1 minute, until well incorporated.
- Transfer the jam to a mason jar/ air-tight container and refrigerate for at least 2 hours (preferably overnight).
- Serve & Enjoy!
Notes
You can store this jam in an air tight container, in the refrigerator, for up to 3 weeks.
