Stuffed Bell Peppers with Ground Turkey & Rice

Ingredients
- 4 large bell peppers
- 7 oz 93% lean ground turkey
½ cup cooked brown rice
- 1 can (14 oz) diced tomatoes, drained
½ cup diced onion
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp cumin
Salt, pepper
- 2 oz shredded part-skim mozzarella
- 1 tbsp olive oil
- Optional: fresh parsley
Directions
Preheat oven to 375°F (190°C).
- Cut tops off peppers, remove seeds. Place in a baking dish.
- Cook turkey with onion in olive oil over medium heat.
- Add garlic, cumin, Italian seasoning, and diced tomatoes. Simmer 5 minutes.
- Stir in cooked rice. Season with salt and pepper.
- Fill each pepper with turkey-rice mixture.
Top with mozzarella. Cover dish with foil.
- Bake 30 minutes. Remove foil, bake 5 more minutes to brown cheese.
Notes
Use different colored peppers for variety and visual appeal — each color has slightly different antioxidant profiles. Yellow and orange peppers are sweetest. Can be made ahead and refrigerated unbaked up to 24 hours.
