Spiced Lentil Patties

A satisfying plant-based burger alternative that’s high in protein and fiber.

Ingredients

  • 1.5 cups green or brown lentils, cooked and partially mashed
  • 1/2 cup rolled oats or breadcrumbs
  • 1 egg (or flax egg for vegan)
  • 1/2 onion, finely grated
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp coriander
  • 1/4 tsp cayenne
  • 2 tbsp fresh parsley
  • Salt and pepper
  • Olive oil for cooking

Directions

  1. Combine all ingredients. Mix well. Refrigerate 20 minutes to firm up.

Form into 8 patties about 1/2 inch thick.

  1. Heat oil in a skillet over medium heat. Cook patties 4-5 minutes per side until golden.
  2. Serve in lettuce cups or on a salad. Top with tzatziki or tahini sauce.

Notes

Refrigerating the mixture is essential — it makes the patties hold together much better during cooking. These freeze well before or after cooking.
