Thick-cut cauliflower steaks roasted with warming spices become a truly satisfying main course.

Ingredients

  • 2 large heads cauliflower
  • Spice rub: 1.5 tsp cumin, 1 tsp smoked paprika, 1/2 tsp turmeric, 1/2 tsp coriander, 1/4 tsp cayenne, 1 tsp garlic powder, salt
  • 3 tbsp olive oil
  • Tahini drizzle: 3 tbsp tahini, 2 tbsp lemon juice, 2 tbsp water, 1 clove garlic, salt
  • Pomegranate seeds and chopped parsley to serve

Directions

Preheat oven to 425°F.

  1. Remove outer leaves from cauliflower. Stand upright and slice into 3/4-inch steaks. You’ll get 2-3 per head.
  2. Mix spices with olive oil. Brush generously on both sides of each steak.
  3. Roast on a parchment-lined sheet 20-25 minutes, flipping once, until golden and tender.
  4. Whisk tahini sauce, adding water until drizzleable.
  5. Serve drizzled with tahini sauce, topped with pomegranate and parsley.

Notes

The florets that fall off while cutting can be roasted alongside the steaks. Roasting at very high temp is what creates the caramelization that makes cauliflower delicious.
