Southwest Shrimp Fettuccine Alfredo

Ingredients

  • 1 bag Tofu Shirataki Fettuccine Noodles
  • 4 oz. raw shrimp, peeled, tails removed
  • 1 tsp. lime juice
  • 1/4 tsp. chili powder
  • 1/4 tsp. cumin
  • 1 tsp. fat-free sour cream
  • 1/2 tsp. chopped garlic
  • 1 wedge Laughing Cow Light Queso Fresco & Chipotle cheese cut into small pieces
  • 2 tbsp. black bean and corn salsa
  • 1 tbsp. chopped fresh cilantro
  • Salt and pepper to taste
  • Vegaline Garlic Mist

Directions

  1. Rinse and separate noodles.
  2. Roughly cut noodles (they are pretty long).
  3. Heat a non-skillet over medium heat.
  4. Spray with garlic mist.
  5. Add shrimp, pour lime juice over the top, and stir.
  6. Sprinkle on chili powder and cumin.
  7. Cook and stir for about 4 minutes, until cooked through.
  8. Transfer shrimp to a medium bowl, and cover to keep warm.
  9. Spray pan with more garlic mist.
  10. Add noodles, sour cream, garlic, cheese, salt and pepper.
  11. Cook and stir until cheese and sour cream has melted into a sauce and coated the noodles (2 – 3 min).
  12. Transfer to a plate or bowl.
  13. Top with shrimp, salsa, and cilantro.
  14. Enjoy!
