Set it in the morning, come home to a complete, nutritious meal.

Ingredients

  • 1.5 lbs ground turkey, browned
  • 4 cups low-sodium chicken broth
  • 2 cups diced tomatoes
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 zucchini, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup green beans
  • 1 tsp Italian seasoning
  • 1 tsp dried thyme

Salt and pepper

  • 2 cups baby spinach (add last 30 min)

Directions

  1. Brown ground turkey in a skillet, breaking apart. Drain fat.
  2. Add all ingredients except spinach to slow cooker. Stir to combine.

Cook on LOW 6-8 hours or HIGH 3-4 hours.

  1. Add spinach in the last 30 minutes. Season with salt and pepper.
  2. Serve with crusty bread or as-is.

Notes

This freezes perfectly in individual portions. A great Sunday prep for easy weekday lunches.
