Shrimp & "Cauliflower Grits"

Ingredients
- 7 oz large shrimp, peeled and deveined
- 2 cups cauliflower florets (for grits)
- 2 oz reduced-fat cream cheese
- 2 tbsp grated Parmesan
- 2 cloves garlic, minced
- ½ cup diced onion
½ cup diced bell pepper
- 1 tbsp olive oil
- 1 tsp Cajun seasoning
- Hot sauce to taste
- Green onions and lemon for garnish
Directions
- Steam or microwave cauliflower until very soft (5–7 minutes).
- Process in a food processor or blender with cream cheese, Parmesan, salt, and pepper until smooth. Adjust consistency with a splash of water.
Season shrimp with Cajun seasoning.
- Heat olive oil in a pan over high heat. Sauté onion and pepper 3–4 minutes.
- Add shrimp and cook 2–3 minutes per side until pink.
Add garlic in the last 30 seconds.
- Serve shrimp over cauliflower grits. Garnish with green onions, lemon, and hot sauce.
Notes
Don’t blend the cauliflower grits too fine — some texture is better than a completely smooth puree. The cream cheese binds everything and adds richness without significant carbs.
