Shirataki noodles have essentially zero carbs or calories, making this a true diabetic-friendly stir-fry.

Ingredients

  • 2 packages (7 oz each) shirataki noodles
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger
  • Sauce: 3 tbsp low-sodium soy sauce, 1 tbsp oyster sauce (or vegetarian oyster sauce), 1 tsp sesame oil, 1 tsp rice vinegar
  • 1 tbsp vegetable oil
  • Sesame seeds

Directions

  1. Prepare shirataki noodles: rinse very well under cold water, then boil 2 minutes. Drain and dry-fry in a hot skillet 2-3 minutes to remove moisture.
  2. Heat oil in a wok over high heat. Stir-fry broccoli and snap peas 3-4 minutes.
  3. Add garlic, ginger, and bell pepper. Cook 1-2 minutes.
  4. Add prepared shirataki noodles. Toss everything together.
  5. Pour sauce over and toss well. Cook 1-2 more minutes.
  6. Serve topped with sesame seeds.

Notes

Rinsing and dry-frying shirataki noodles is essential — they have a slightly fishy smell straight from the package that disappears completely with this treatment.
