Ingredients

  • 2 large heads broccoli, cut into florets
  • 4 cloves garlic, thinly sliced
  • 3 tbsp olive oil
  • 1 lemon (zested and juiced)
  • 1/4 tsp red pepper flakes
  • Salt and pepper
  • Grated Parmesan (optional)

Directions

  1. Preheat oven to 425°F. Broccoli must be completely dry for roasting.
  2. Toss broccoli and garlic with olive oil, salt, pepper, and red pepper flakes.
  3. Spread in a single layer on a baking sheet — do not crowd.
  4. Roast 18-22 minutes until edges are crispy and browned.
  5. Transfer to a bowl. Toss with lemon zest, lemon juice, and Parmesan if using.

Notes

The browning is flavor. Don’t be afraid of color on roasted vegetables. A single layer is essential — overcrowding causes steaming.
