Rabbit Offal
Directions
- Top Left – Kidney, Top Right – Heart, Bottom – liver
- Heat a non-stick pan and spray it with Low Calorie garlic cooking spray (I use Vegaline).
- Clean the hearts, livers and kidneys from a rabbit by removing any excess fat and put them in the pan.
- Salt and Pepper to taste.
- Cook until just cooked through – DO NOT OVER COOK! Liver should be just a bit pink while the kidneys and heart should be just browned through. Overcooking will make them tough.
