Marinated portobello caps grilled to meaty perfection. Satisfying as a burger replacement.
Ingredients
- 4 large portobello mushroom caps, stems and gills removed
- Marinade: 3 tbsp olive oil, 2 tbsp balsamic vinegar, 2 tbsp soy sauce, 3 cloves garlic minced, 1 tsp thyme, 1 tsp rosemary, black pepper
Directions
Mix all marinade ingredients together.
- Brush both sides of mushroom caps generously with marinade. Let sit 15-30 minutes.
- Grill or broil mushrooms 6-8 minutes per side until tender and juicy.
Baste with remaining marinade while cooking.
- Serve as a steak replacement with your choice of sides.
Notes
Removing the gills prevents bitterness and allows better marinade absorption. These are excellent on a burger bun with all the fixings.
