Polenta for S.O.S
The missing quarter of my tasting. I’ve had S.O.S. on plain grits, on cheese grits and on fried grit cakes — never on polenta. This is the base for that fourth arm, and the hypothesis is specific: grits marry the gravy, polenta holds up under it. Nobody has published this comparison, so if you run it properly it’s original.
Ingredients
- ⚠ The test is only valid with REAL flint polenta. Read the notes before you shop.
- 1 cup (6 oz) real flint polenta, reduction-milled — an otto file or similar
- 4 cups water, added in stages
- 1 tsp fine sea salt
- 2 Tbsp unsalted butter, off the heat
- ½ tsp black pepper

Key ingredients
- Skim it first, exactly as for grits: cover the polenta with water, stir once, let it settle a minute, and skim the chaff and hulls off the top with a fine strainer without disturbing the water. Sixty seconds, and it’s the difference between clean and gritty.
- Bring to a simmer over medium, stirring constantly for the first 5–8 minutes until the starch takes hold.
- Drop to the lowest heat, cover, and stir every 10 minutes, adding hot water in stages whenever it’s thick enough to stand a spoon in. Salt at the halfway point.
- Cook until the grain is fully tender — defer to your producer’s timing, not mine (see the notes; real flint is a slow, hard grain and I don’t have a sourced number for it).
- Off the heat, beat in the butter vigorously. Season with the pepper.
- Taste it plain, before any gravy touches it. You cannot judge how a base carries a gravy if you don’t know what it tastes like alone. Then ladle S.O.S. over the top and compare it against grits from the same batch of gravy.

⚠ THE TEST IS ONLY VALID IF YOU BUY THE REAL THING
This is the buy-side warning that makes or breaks the whole experiment, so it goes first:
It is only a valid comparison if you buy real stone-ground dent grits and real flint polenta. Comparing two bags of degerminated commodity cornmeal proves nothing.
Quaker quick grits versus a supermarket tube of polenta are both degerminated dent-corn meal at different grinds. Run that and you’ll get the mushy “they’re basically the same” conclusion the lazy articles reach — which is why they reach it. You’d be testing grind size and calling it a cuisine.
Anson Mills antebellum dent grits versus a genuine Italian flint polenta is a different matter and is worth a real side-by-side.
⚠ Where my numbers come from
I don’t have a sourced cooking ratio for real flint polenta. The 1:4 staged ratio and the skim/stir/stage method above are borrowed from the grits side (Sean Brock’s 2 cups : 8 cups, delivered in stages; Anson Mills recipe #489). I’m telling you that rather than dressing a grits recipe up as a polenta one. Flint is harder and less starchy than dent — expect it to want more time, and trust your producer’s instructions over my transplanted ratio.
What actually differs — four variables, not one

The milling is the under-reported one and it’s Glenn Roberts’s actual thesis: “it is reduction milling that sets polenta apart visually, texturally, and even in terms of flavor.” A wide particle spread cooks unevenly — the fines blow out into a starchy slurry and thicken the pot while the coarse pieces are still chalky. That is exactly what makes real stone-ground grits creamy-with-texture: the fines make the cream, the coarse bits make the tooth. Uniform-milled polenta can’t do that. So the texture difference everyone attributes to dent-vs-flint is at least as much a milling artifact.
⚠ And flint grits exist. The corn rule is a strong tendency, not a definition.
The hypothesis — stated as a prediction so you can prove me wrong

That last row is the whole experiment. S.O.S. gravy is salty, thick and assertive. My prediction: the polenta holds its own and the grits surrender — and you may well find you want the surrender, because that creamy merge is what S.O.S. on grits is.

How to run it so it means something
- One batch of gravy, split. Otherwise you’re testing your roux, not the base.
- Same day, same sitting. Memory is a terrible instrument.
- Same egg treatment on every arm, or leave the egg off for the tasting — the yolk is a sauce and it will mask differences.
- Taste every base plain first.
- Write it down as you go. This is untested ground and your notes are the only data that will ever exist on it.
