Mikey Beanner's Potato Soup
Ingredients
- 4 – 5 medium Red Potatoes
- 3 Cups chicken Stock
- 1 Small White Onion (about 1 Cup)
- 1 Stalk Celery
- 3 Tbsp Flour
- 3 Tbsp Fat rendered from bacon (see recipe)
- 3 Cups Milk
- 1/2 Tsp Honey
- 1 Cup Shredded Cheddar Cheese
- 1/2 to 1 pound bacon
- Fresh ground black pepper
- Fried Bacon Rendered Fat Reserved Bacon Fat
- Red Potatoes Diced Potatoes
- Onions and celery
Directions
- Cut bacon into 1 inch chunks and fry until just crisp.

- Remove from pan and pour grease off into heat proof container (I use a coffee cup).
Peel potatoes and cut into 1 inch cubes.
- Cover with chicken stock and simmer until just cooked, but still very firm.
Potatoes with stock
- When potatoes are done, drain off and save boiling liquid (stock). In the mean time, peel and finely chop onion and celery.
- Put 3 Tbsp of the reserved bacon fat into the pan used to cook the bacon. Add the onions and celery and cook over medium heat until onion is translucent but not brown.
Adding oil
- Once the veggies are cooked, add 3 Tbsp Flour to make a roux. This will eventually thicken the soup. Cook this over medium heat for about 3 to 5 minutes.

- Now, slowly add 2 cups of the reserved stock to this veggie / roux mixture. Be sure to deglaze the sides of the pan to get all the yummy bacon bits and carmalization that are still there.
- Now transfer to a soup pot and add the rest of the ingredients and mix until all the cheese has been incorporated into the soup.
Potato soup ready to simmer!
- Now simmer on very low heat for about 30 minutes stirring frequently as this will burn easily. Also, you do not want to boil this as the milk will sperate and that is a bad thing.
- Be sure to keep leftovers in the fridge… Enjoy!
