Better than takeout. Low-sugar sauce and cauliflower rice make this genuinely diabetic-friendly.
Ingredients
- 1.5 lbs flank steak, sliced thin against the grain
- 4 cups broccoli florets
- Sauce: 1/4 cup low-sodium soy sauce, 2 tbsp oyster sauce, 1 tbsp sesame oil, 1 tsp cornstarch, 1 tsp ginger, 3 cloves garlic, 1 tsp low-sugar sweetener
- 2 tbsp vegetable oil
- Sesame seeds to garnish
- Cauliflower rice to serve
Directions
- Marinate beef in 1 tbsp soy sauce and cornstarch for 10 min. Mix remaining sauce ingredients.
- Blanch broccoli in boiling water 2 minutes. Drain and set aside.
- Heat 1 tbsp oil in a wok over high heat. Sear beef in a single layer 1-2 min per side. Remove.
Add remaining oil. Stir-fry broccoli 2-3 minutes.
- Return beef to pan. Pour sauce over and toss 1 minute until glossy.
- Serve over cauliflower rice. Top with sesame seeds.
Notes
Partially freeze steak 30 minutes before slicing for paper-thin cuts. High heat is essential for proper caramelization.
