Light Vietnamese Pork Stock (Nuoc Dung Heo)

Ingredients

  • 1 pound meaty but lean pork bones
  • 5 white peppercorns
  • 9 cups cold water

Directions

  1. Bring the cold water, bones, and peppercorns to a slow boil, then reduce heat and simmer on low, skimming, for 45 minutes. Strain and skim off any fat.
