Lemon Herb Chicken with Roasted Sweet Potato & Broccoli

Ingredients
- 7 oz chicken breast
- 1 small sweet potato, cubed
- 2 cups broccoli florets
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 tsp dried thyme or rosemary
- 1 tsp paprika
- Salt, pepper
- Fresh parsley to garnish
Directions
Preheat oven to 425°F (200°C).
- Mix olive oil, garlic, lemon zest, lemon juice, thyme, paprika, salt, and pepper in a small bowl.
- Toss sweet potato cubes with half the herb mixture. Spread on baking sheet.
- Roast sweet potato 10 minutes. Add broccoli (tossed with a little of the herb mixture).
- Coat chicken breast with remaining herb mixture. Place on pan.
- Roast 20 more minutes until chicken is 165°F internal temperature and vegetables are tender.
- Rest chicken 5 minutes, then slice. Garnish with parsley and squeeze of lemon.
Notes
Lemon zest contains the most intense lemon flavor — much more than juice alone. Don’t skip it. This recipe works equally well with salmon (reduce cook time to 12–15 minutes) or pork tenderloin.
