Ingredients
- 1.5 lbs pork loin, sliced thin
- Marinade: 3 tbsp soy sauce, 2 tbsp mirin, 1 tbsp sake, 2 tbsp grated ginger (this is a lot — it’s the point)
- 1 tbsp vegetable oil
- Shredded cabbage, rice, and miso soup to serve
Directions
- Mix marinade ingredients together.
- Marinate pork slices 15-30 minutes.
Heat oil in a skillet over medium-high heat.
- Cook pork in batches without crowding, 2-3 minutes per side, until caramelized and cooked through.
The ginger in the sauce should brown slightly.
- Serve over white rice with a mound of shredded cabbage.
Notes
The key is a large amount of fresh ginger. The warmth and bite of ginger is the defining flavor of this dish. Don’t substitute ginger powder.
