Hummus (From Scratch)

The definitive smooth, creamy hummus — far superior to anything from a container.

Ingredients

  • 2 cans (15 oz each) chickpeas, rinsed (save liquid)
  • 1/3 cup tahini (good quality)
  • 3 tbsp fresh lemon juice
  • 2 small cloves garlic
  • 1/4 tsp cumin

Salt to taste

  • 3-4 tbsp ice cold water
  • Olive oil, paprika, parsley, and whole chickpeas to serve

Directions

  1. Reserve a few chickpeas for garnish. Add remaining chickpeas to food processor.
  2. Process until powdery, scraping down sides (2-3 min).
  3. Add tahini, lemon juice, garlic, cumin, and salt. Process 2 more minutes.
  4. With processor running, add ice cold water 1 tbsp at a time until very smooth and creamy.

Taste and adjust salt and lemon.

  1. Spread on a plate using a circular motion, creating a well in the center.
  2. Fill well with olive oil. Garnish with paprika, parsley, and reserved chickpeas.

Notes

Ice-cold water makes the hummus fluffier and paler. Processing the chickpeas before adding tahini creates a much smoother texture. Quality tahini is crucial — don’t use old or separated tahini.
