The definitive smooth, creamy hummus — far superior to anything from a container.
Ingredients
- 2 cans (15 oz each) chickpeas, rinsed (save liquid)
- 1/3 cup tahini (good quality)
- 3 tbsp fresh lemon juice
- 2 small cloves garlic
- 1/4 tsp cumin
Salt to taste
- 3-4 tbsp ice cold water
- Olive oil, paprika, parsley, and whole chickpeas to serve
Directions
- Reserve a few chickpeas for garnish. Add remaining chickpeas to food processor.
- Process until powdery, scraping down sides (2-3 min).
- Add tahini, lemon juice, garlic, cumin, and salt. Process 2 more minutes.
- With processor running, add ice cold water 1 tbsp at a time until very smooth and creamy.
Taste and adjust salt and lemon.
- Spread on a plate using a circular motion, creating a well in the center.
- Fill well with olive oil. Garnish with paprika, parsley, and reserved chickpeas.
Notes
Ice-cold water makes the hummus fluffier and paler. Processing the chickpeas before adding tahini creates a much smoother texture. Quality tahini is crucial — don’t use old or separated tahini.
