Japan’s most popular fast food — thinly sliced beef and sweet onion over rice. Done in 20 minutes.
Ingredients
- 1 lb beef sirloin, frozen 30 min then sliced paper thin
- 2 large onions, thinly sliced
- 4 cups cooked short-grain rice
- Sauce: 1 cup dashi, 1/4 cup soy sauce, 3 tbsp mirin, 1 tbsp sake, 1 tsp sugar
- 4 soft-boiled eggs (optional)
- Red pickled ginger (beni shoga) to serve
- Green onions
Directions
- Combine sauce ingredients in a wide, shallow pan. Bring to a simmer.
- Add sliced onions. Cook 8-10 minutes until softened and sauce is absorbed.
- Add beef slices. Stir gently and cook just until beef is barely cooked through, 2-3 minutes.
Spoon beef and onions with sauce over rice.
- Top with a soft-boiled egg, pickled ginger, and green onions.
Notes
Partially freezing the beef makes it easy to slice paper-thin. The thin slicing is essential — thicker cuts won’t have the right texture.
