Protein-doubled Caesar with omega-3-rich salmon instead of croutons.

Ingredients

  • 4 salmon fillets (5 oz each)
  • 2 large heads romaine, chopped
  • Light Caesar dressing: 2 tbsp light mayo, 1 tbsp lemon juice, 1 tsp Worcestershire, 1 clove garlic minced, 1 tsp Dijon, 2 tbsp Parmesan, 2 tbsp olive oil, salt and pepper
  • Shaved Parmesan to serve
  • Salt, pepper, and garlic powder for salmon

Directions

  1. Season salmon and grill or pan-sear 4-5 min per side until cooked through.
  2. Whisk together all dressing ingredients.

Toss romaine with dressing until well coated.

  1. Divide salad onto plates. Flake warm salmon on top.
  2. Shave Parmesan over. Serve immediately.

Notes

Make the dressing in a jar and shake — it keeps 5 days in the fridge. Far healthier than bottled Caesar dressings.
