Protein-doubled Caesar with omega-3-rich salmon instead of croutons.
Ingredients
- 4 salmon fillets (5 oz each)
- 2 large heads romaine, chopped
- Light Caesar dressing: 2 tbsp light mayo, 1 tbsp lemon juice, 1 tsp Worcestershire, 1 clove garlic minced, 1 tsp Dijon, 2 tbsp Parmesan, 2 tbsp olive oil, salt and pepper
- Shaved Parmesan to serve
- Salt, pepper, and garlic powder for salmon
Directions
- Season salmon and grill or pan-sear 4-5 min per side until cooked through.
- Whisk together all dressing ingredients.
Toss romaine with dressing until well coated.
- Divide salad onto plates. Flake warm salmon on top.
- Shave Parmesan over. Serve immediately.
Notes
Make the dressing in a jar and shake — it keeps 5 days in the fridge. Far healthier than bottled Caesar dressings.
