Goulash – Low Calorie

Ingredients

  • 1 pound lean ground turkey
  • 1 bag shirataki elbow macaroni noodles
  • 1 quart stewed tomatoes
  • 2 teaspoons paprika (I use smoked paprika)
  • 1 tsp cumin
  • 1/2 to 1 tsp ground chipotle chile powder
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1/2 can pumpkin (not the pie filling)
  • 1/3 cup egg beaters original
  • Vegaline Garlic Mist Spray

Directions

Preheat oven to 425.

  1. Heat a non-stick pan and spray with the Garlic Mist.
  2. Cook the onions and garlic until the onion starts to get translucent.
  3. Add turkey, season with salt and pepper, and cook until brown.
  4. Remove from heat, drain, put into a bowl, and set aside.
  5. Rinse and separate the macaroni.

Drain as much water as possible.

  1. Put the macaroni in a microwave safe bowl and microwave it for 1 minute.
  2. Drain again thoroughly (it’s amazing how much water you can get out of these things).
  3. Add the noodles and rest of the ingredients to the macaroni.
  4. Spray a casserole dish with the Garlic Spray.
  5. Spoon mixture into the casserole dish.
  6. Bake in the oven for 25 to 30 minutes.
  7. Enjoy!
