Cucumber Avocado Salad

Cooling, creamy, and refreshing. An ideal side for grilled proteins.

Ingredients

  • 2 English cucumbers, sliced or diced
  • 2 ripe avocados, cubed
  • 1/2 red onion, very thinly sliced
  • 1/4 cup fresh cilantro or dill
  • Dressing: 3 tbsp olive oil, 2 tbsp lime or lemon juice, 1 clove garlic minced, salt, pepper, pinch of cayenne

Directions

Combine cucumber and red onion in a bowl.

  1. Whisk dressing and pour over cucumber. Toss and let sit 5 minutes.
  2. Add avocado cubes and herb. Toss gently to avoid mashing avocado.
  3. Season with additional salt and pepper if needed. Serve immediately.

Notes

Add immediately before serving — avocado browns within an hour. Can prep cucumber and dressing ahead.
