What it is
Citric acid is a weak organic acid, sold as a white crystalline powder — the acid of citrus fruit, produced industrially by fermentation. In the kitchen it is a souring agent; in cheesemaking it is a way to drop milk’s pH immediately instead of waiting hours for bacteria to do it.
What it actually does to milk
Casein has an isoelectric point around pH 4.6. Take milk to that point with acid and the casein micelles lose their mutual repulsion and fall out of solution — they precipitate. That is not the same event as a rennet set, which builds a gel by cutting one bond and letting the micelles knit into a network.
The difference is structural and it decides what you can do next. An acid-set curd has no stretch, no proper melt and no aging in it: it is the mechanism behind ricotta, paneer, queso fresco and cream cheese, all of which are eaten young.
The thirty-minute mozzarella, honestly
The famous quick mozzarella uses citric acid and rennet — the acid gets the pH into the window fast, the rennet still forms the gel. It works, it is a real cheese, and it is genuinely good.
But it is not the same material as a cultured pasta filata mozzarella, and the difference is not skill. A cultured mozzarella arrives at its stretch through a slow bacterial acidification that leaves a different calcium balance in the curd; the fast-acid route gets to a stretchable pH by a shorter path and gives a curd that behaves differently in the hands and on a pizza.
⭐ And one rule flips on the acid route: the usual “never use ultra-pasteurised milk” warning is about rennet gels. A hot acid-set is not building a rennet gel, so the denatured whey protein that ruins a rennet cheese is simply extra yield. UHT milk that would be useless for a cheddar makes perfectly good ricotta.
The other half of its life: canning
More than half the recipes that link here are not cheese at all, and it is worth saying why.
Citric acid is the standard acidifier for home canning — added to tomatoes, tomato sauce, tomato paste and some fruit before processing. Tomatoes sit close to the pH boundary that decides whether a food can be safely water-bath canned, and modern varieties vary; a measured dose of acid puts the jar reliably on the safe side of that line rather than near it.
⚠ Follow a tested canning recipe’s quantity exactly — this is one of the few places in cooking where an ingredient is doing a safety job and eyeballing it is not a style choice. Bottled lemon juice is the usual approved alternative precisely because its acidity is standardised; fresh lemons are not.
It also turns up as a preservative and a tartness adjuster in fruit preparations, where it keeps colour bright — the same reason it appears in commercial products under its own name.
Using it
Dissolve it fully in cool, unchlorinated water before it goes near the milk, and stir it in with the milk cold. Adding the powder directly, or to warm milk, gives you local over-acidification — grainy patches where the acid landed.
Measure it by weight if you can. It is potent, and the difference between a stretchy curd and an unworkable crumbly one is small.
Substitutes (if absolutely necessary)
- Lemon juice — the traditional acid, and it works. It is far less concentrated and it varies fruit to fruit, so expect to add more and to hit a slightly different endpoint; it also carries a little flavour, which is fine in ricotta and noticeable in mozzarella.
- Distilled white vinegar — the other standard, cleaner-tasting than you would expect. Same caveat about strength and about a faint flavour of its own.
- Tartaric acid — used this way for mascarpone in particular.
- Note: none of the three is a substitute for a culture in an aged cheese. Acid gets the pH down; it does not develop flavour over months.
Where to find it
- Local store: the canning and preserving aisle in season, and reliably in the kosher or Middle Eastern section — often labelled sour salt, which is the same thing.
- Online: cheaply, in quantities far larger than a home cheesemaker will ever use. A small jar lasts years.
- Storage: airtight. It is hygroscopic and will cake into a solid lump in a humid cupboard, which is a nuisance rather than a spoilage.
