Chicken Shawarma (Oven Roasted)

The flavors of street shawarma achieved in your oven. Perfect for meal prep.

Ingredients

  • 2 lbs boneless chicken thighs
  • Marinade: 1/4 cup olive oil, 3 tbsp lemon juice, 4 cloves garlic minced, 1 tbsp cumin, 1 tsp turmeric, 1 tsp coriander, 1/2 tsp cinnamon, 1/2 tsp allspice, 1/4 tsp cardamom, salt and pepper
  • Serve with: pita or rice, tomatoes, cucumber, red onion, parsley
  • Garlic sauce: 1 cup Greek yogurt, 2 cloves garlic, 1 tbsp lemon, salt

Directions

  1. Marinate chicken at least 2 hours (overnight is better).
  2. Preheat oven to 425°F. Place chicken on a rack over a baking sheet.
  3. Roast 25-30 minutes until cooked and slightly charred.
  4. Rest 5 minutes, then slice thin against the grain.
  5. Serve in pita or over rice with garlic sauce and vegetables.

Notes

Slicing thin while slightly warm mimics the shaved shawarma texture. For extra authenticity, briefly sear sliced chicken in a very hot dry pan before serving.
