Celery with Peanut Butter & Raisins ("Ants on a Log")

The classic childhood snack, upgraded. Great crunch, satisfying combination of fiber, fat, and a touch of sweetness.

Ingredients

  • 3 stalks celery, cleaned and cut to 4-inch lengths
  • 1.5 tbsp natural peanut butter (no added sugar)
  • 1 tbsp raisins (or 3–4 fresh blueberries for lower sugar)

Directions

  1. Wash and dry celery stalks. Cut into 4-inch pieces.
  2. Fill the concave side of each stalk with peanut butter.
  3. Press a few raisins or blueberries into the peanut butter.

Notes

Use natural peanut butter (ingredients: peanuts, salt) not regular peanut butter which contains added sugar and hydrogenated oils. The celery provides water content and crunch; the PB provides fat and protein; the raisins provide a small sweet hit that kills sugar cravings.
