Cauliflower Mashed 'Potatoes'

Creamy, buttery, and indistinguishable from mashed potatoes when done right. About 80% fewer carbs.
Ingredients
- 1 large head cauliflower, cut into florets
- 3 cloves garlic, peeled
- 2 tbsp butter
- 3 oz cream cheese or Greek yogurt
- 1/4 cup Parmesan cheese, grated
- Salt and white pepper
- Fresh chives for garnish
- Optional: 1/4 tsp garlic powder, pinch of nutmeg
Directions
- Steam or boil cauliflower with garlic cloves until very tender, 10-12 minutes.
- Drain thoroughly and pat dry — excess moisture ruins the texture.
- Process in a food processor with butter, cream cheese, and Parmesan until very smooth.
- Season with salt, white pepper, and optional garlic powder and nutmeg.
- Transfer to a serving bowl. Garnish with chives and a pat of butter.
Notes
The most important step is removing moisture. After draining, return to the hot pot over low heat for 1-2 minutes to steam off remaining water.
