Ingredients

  • 1 medium head cabbage, roughly chopped
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 1 large onion, diced
  • 1 can (28 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 cup green beans
  • 1/2 cup green pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp thyme
  • 2 tbsp olive oil
  • Salt and pepper
  • Fresh parsley

Directions

  1. Heat olive oil in a large pot. Sauté onion, carrots, and celery 5 minutes.

Add garlic, cumin, and thyme. Cook 1 minute.

  1. Add cabbage, green beans, pepper, diced tomatoes, and broth.
  2. Bring to a boil then simmer covered 20-25 minutes until vegetables are tender.
  3. Season generously with salt and pepper. Top with fresh parsley.

Notes

Eat as a snack or light meal. The extremely low calorie density means you can eat a large bowl for very few calories. Add cooked chicken for protein.
