A humble, ultra-quick stir-fry that’s one of the most effective blood-sugar-friendly dinners possible.
Ingredients
- 1 lb ground turkey
- 4 cups green cabbage, roughly chopped
- 3 green onions, sliced
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
Red pepper flakes
- 1 tbsp vegetable oil
Directions
- Heat oil in a large wok or skillet over high heat. Add turkey, breaking apart, cook 6-7 minutes until browned.
Add garlic and ginger, cook 1 minute.
- Add cabbage. Stir-fry 4-5 minutes until softened but still slightly crisp.
- Add soy sauce, rice vinegar, and sesame oil. Toss well.
- Top with green onions and red pepper flakes.
Notes
Cabbage is one of the most diabetes-friendly vegetables — extremely low calorie with significant fiber. This entire dish has fewer carbs than a single tortilla.
