A humble, ultra-quick stir-fry that’s one of the most effective blood-sugar-friendly dinners possible.

Ingredients

  • 1 lb ground turkey
  • 4 cups green cabbage, roughly chopped
  • 3 green onions, sliced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Red pepper flakes

  • 1 tbsp vegetable oil

Directions

  1. Heat oil in a large wok or skillet over high heat. Add turkey, breaking apart, cook 6-7 minutes until browned.

Add garlic and ginger, cook 1 minute.

  1. Add cabbage. Stir-fry 4-5 minutes until softened but still slightly crisp.
  2. Add soy sauce, rice vinegar, and sesame oil. Toss well.
  3. Top with green onions and red pepper flakes.

Notes

Cabbage is one of the most diabetes-friendly vegetables — extremely low calorie with significant fiber. This entire dish has fewer carbs than a single tortilla.
