Brazil’s uniquely tropical take on stroganoff — richer and more savory than the original, served with rice and shoestring potatoes.

Ingredients

  • 2 lbs boneless chicken breast, cut into strips
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream or creme fraiche
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1/2 lb mushrooms, sliced
  • 2 tbsp olive oil
  • Salt and pepper

Fresh parsley

  • Cooked white rice and shoestring potato chips to serve

Directions

Season chicken with salt and pepper.

  1. Brown chicken in olive oil over high heat. Remove.
  2. Sauté onion and mushrooms until softened and golden.

Add garlic, cook 1 minute.

  1. Add tomatoes, ketchup, Worcestershire, and mustard. Simmer 5 minutes.
  2. Return chicken to pan. Add cream. Simmer 10 minutes.

Season with salt and pepper. Top with parsley.

  1. Serve over white rice with shoestring potato chips on top.

Notes

The ketchup is not a mistake — it’s authentic to Brazilian stroganoff and provides the distinctive sweetness. Shoestring potato chips as topping are traditional in Brazil.
