Black Bean Burger + Corn Salad

Ingredients
- 1 black bean burger, thawed
- 1/2 cup cooked corn
- 1/2 cup chopped tomato
- 2 teaspoons olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon chili powder
- 1/8 teaspoon kosher salt
- 2 cups chopped bibb or romaine lettuce leaves
Directions
- Heat the black bean burger in the microwave for 1 minute, if desired, to heat through. Cut burger into bite-size pieces.
- Toss the corn and tomato together. Whisk lemon juice, chili powder, and salt together. Top lettuce with veggie burger and corn-tomato mixture, and drizzle with dressing.
