Baked Pancake Squares Recipe

Ingredients

  • 2 tablespoons sugar
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 tablespoons butter
  • 1 1/2 cups milk
  • 2 eggs
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 350. Spray a 9x13 baking dish with cooking spray.
  2. Melt the butter and set aside. In a medium bowl, whisk together the sugar, flour, baking powder, and salt.
  3. In a large, bowl whisk together the milk, eggs, and vanilla. Stir in the melted butter. Then stir the flour mixture into the milk mixture, just until combined. Don’t over-mix; the batter will be a bit lumpy.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes, until edges are golden brown and a toothpick inserted in the center comes out clean. Let cool for 5 minutes, then cut into squares and serve.
