Baked Mediterranean Salmon

Salmon roasted with olives, capers, and tomatoes in the Mediterranean tradition. Impressive for how little effort it takes.
Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup cherry tomatoes, halved
- 1/3 cup Kalamata olives, halved
- 2 tbsp capers, drained
- 4 cloves garlic, thinly sliced
- 3 tbsp olive oil
- 1 lemon, sliced into rounds
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and pepper
- Fresh parsley to finish
Directions
- Preheat oven to 400°F. Line a baking sheet with parchment.
- Arrange tomatoes, olives, capers, and garlic on the pan. Drizzle with 2 tbsp olive oil, toss.
- Nestle salmon fillets on top of the vegetables. Drizzle with remaining oil.
- Season salmon with oregano, red pepper flakes, salt, and pepper. Top with lemon slices.
- Bake 12-15 minutes until salmon flakes easily. Do not overcook.
- Garnish with fresh parsley and serve directly from the pan.
Notes
The vegetables create a sauce as they roast. Wild salmon is preferable for omega-3 content.
