Baked Herb Chicken Thighs

Juicy, crispy-skinned chicken thighs seasoned with Mediterranean herbs. The most forgiving chicken recipe in existence.
Ingredients
- 8 bone-in skin-on chicken thighs
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp each: dried thyme, rosemary, oregano
- 1 tsp smoked paprika
Salt and pepper
- 1 lemon
- Fresh thyme to garnish
Directions
- Preheat oven to 425°F. Pat chicken completely dry — this is the key to crispy skin.
- Mix olive oil, garlic, and all dried herbs and spices into a paste.
- Rub paste under and over skin of each thigh. Season generously with salt and pepper.
- Place skin-side up in a cast iron skillet or baking dish.
- Squeeze half the lemon over chicken. Roast 28-32 minutes until skin is golden and crisp, internal temp 165°F.
- Rest 5 minutes. Squeeze remaining lemon over before serving.
Notes
Bone-in, skin-on thighs are significantly more forgiving than breasts — nearly impossible to overcook. Remove skin before eating to reduce saturated fat significantly.
