Cod gets a crispy Parmesan-herb topping that makes it feel indulgent while remaining extremely lean.

Ingredients

  • 4 cod fillets (6 oz each)
  • 1/2 cup grated Parmesan
  • 2 tbsp chopped fresh parsley
  • 1 tbsp fresh thyme leaves
  • 2 cloves garlic, minced

Zest of 1 lemon

  • 2 tbsp olive oil
  • Salt and pepper
  • Lemon wedges to serve

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment.
  2. Pat cod completely dry. Season with salt and pepper.
  3. Mix Parmesan, parsley, thyme, garlic, lemon zest, and olive oil into a paste.

Press herb crust firmly onto top of each fillet.

  1. Bake 12-15 minutes until fish flakes easily and crust is golden.
  2. Serve immediately with lemon wedges.

Notes

Cod is one of the leanest, highest-protein fish available. The cheese crust provides a satisfying texture that makes this feel much richer than it is.
