Mold
Almost every American who sees a white-furred salami for the first time thinks it has gone bad. It hasn’t — that bloom is deliberate, cultivated, and doing real work. But some molds on a drying sausage genuinely are a problem, and the difference is not subtle once you know what to look for.

The white bloom is the point
A traditional dry-cured sausage develops a dense, even, powdery white coat across its whole surface. In European practice this is inoculated deliberately — most commonly Penicillium nalgiovense, sold to home makers as Bactoferm Mold-600 (and the related M-EK-4).
It is not decoration. It does four jobs:
1. It occupies the surface. A dense white coat is a lawn — it takes the space and the nutrients, so the molds you don’t want find nowhere to land. This is competitive exclusion, and it’s the main reason to inoculate rather than hope.
2. It slows and evens the drying. A furred surface moderates moisture loss from the casing, which is a direct defense against case hardening — the failure that wastes the most time in dry curing.
3. It protects the fat from light and oxygen, so the sausage goes rancid more slowly through a long hang.
4. It contributes flavor. The mold’s enzymes work on proteins and fats at the surface, and that’s part of where the mushroomy, faintly nutty character of a good saucisson comes from. A salami dried under a proper bloom tastes different from one dried bare.
Using it
Rehydrate the culture in distilled water (chlorine kills mold spores exactly as it kills starter cultures), let it stand as the maker directs, and either spray or dip the stuffed sausages before they go into the chamber.
Then give it what it wants: high humidity in the first days — the ferment’s 90%+ is ideal — and gentle air movement. It should show as a fine white fuzz within three to five days and close into a solid coat within a week or two.
Nothing showing after a week? Too dry, too cold, or the culture was dead. Re-inoculate rather than wait and hope, because a bare surface is an invitation to whatever’s in your air.
What bad looks like
The heuristic that gets you most of the way: white and powdery is good. Colored and fuzzy is not.

Fuzzy versus powdery is the tell. The cultivated bloom is flat and chalky, like a dusting. Bad molds tend to stand up off the surface with visible filaments.
Smell is the second tell. A good bloom smells faintly of mushrooms and cellar. Anything sharp, ammoniac, musty-in-a-bad-way, or reminiscent of a damp basement means stop.
Wiping
Light patches of the wrong thing on an otherwise good sausage can be wiped off with a cloth dampened in vinegar (or a brine, or a little wine). Wipe, let the surface dry, and put it back.
When not to bother: black or brightly-colored mold, mold that’s gone below the surface, anything on a sausage that also smells wrong, or the same bad mold coming back three times. At that point the chamber conditions are wrong and you’re fighting the environment, not the sausage.
Why yours goes wrong
Almost always humidity and airflow, in that order.
- Too humid, too still → the wrong molds thrive and it goes slimy. Get gentle intermittent air moving.
- Too dry → nothing grows, including the good stuff, and you case-harden instead.
- Contaminated chamber → if bad molds keep coming back, clean it out properly (vinegar, then dry) before the next batch, and inoculate deliberately rather than leaving the surface open.

Eating it
You eat the bloom or you don’t — both are fine. Traditional practice varies by region and even by sausage. A hard, well-developed coat on a saucisson is often brushed or peeled off with the casing; on a smaller stick most people eat it.
I brush the heavy stuff off and don’t worry about the rest.
A distinction worth keeping straight
Mold belongs to the raw dry-cured path only. A hot-smoked or cooked sausage never hangs long enough to develop any, and mold on that is straightforwardly spoilage — there’s no cultivated-bloom interpretation available.
And it’s a different thing from the bloom in the cooked-sausage sense, which is two hours of surface drying and color development after an ice bath. Same word, two halves of the craft, no relationship. I’ve muddled them in conversation more than once.
