Moulds & Baskets
A mould does more than shape a cheese. It decides how the whey leaves, and — because surface-to-volume ratio governs ripening — it partly decides what the cheese can become.
I have several, which sounds like collecting and mostly isn’t.
Two kinds, doing two jobs
Basket moulds are open-weave with no follower. Curd goes in and drains under its own weight. The finished cheese carries the basket’s texture on its surface, which is where the ridged pattern on a traditional chèvre or a ricotta comes from.
For fresh cheeses, bloomy rinds and blue — anything that shouldn’t be compressed.
Hard-cheese moulds are a cylinder plus a follower: a disc that fits inside and transmits the press’s force down onto the curd. For anything pressed.
The follower is the part people improvise badly
If you’re making or adapting a mould, this is where to spend the attention.
It has to fit closely. Too loose and curd extrudes up past it under pressure — you lose yield, you get a ragged edge, and the pressure you thought you were applying is partly going sideways. Too tight and it binds as the curd consolidates and stops transmitting force at all.
And it has to be non-reactive, like everything else — food-grade plastic or stainless, never aluminium.
Drainage: whey has to get out, and out of the way
The failure that’s easy to miss: a mould that drains only from the bottom, sitting in a tray, means the bottom of your cheese is pressed against a pool of its own whey.
What you want:
- Perforations up the sides as well as the base, so whey leaves from wherever it is.
- The mould raised on a rack or ribs, so what leaves can run away.
- A draining surface with a slope and somewhere for whey to go. A flat tray fills up.
Home-made moulds — and there are a lot of drilled-plastic-container designs about — usually fail here rather than on shape. Drill the sides.
Size changes the cheese, not just the portion
Two consequences worth understanding before buying:
Diameter sets your pressure. The same weight on a 4-inch and a 6-inch mould are completely different treatments — the arithmetic is on the presses page, and it’s why a recipe’s pounds are meaningless without its diameter.
And format decides what can ripen properly. A surface-ripened cheese must be small and flat, because the ripening front travels inwards from the rind and can only get so far. A big wheel ripens from within and can be enormous. Choosing a tall narrow mould for a Camembert-style cheese gives you a cheese with a permanently chalky core, and no amount of technique fixes it.
What I’d actually own
Fewer than I do, honestly:
- One basket mould — covers fresh cheeses and anything unpressed.
- One hard-cheese mould with a well-fitting follower, sized to the batches you actually make. For a two-gallon make, something in the 4–5 inch range is realistic.
- A flat, wide mould if you want to attempt bloomy rinds, because the format is not optional for that family.
Beyond that you’re buying shapes, which is enjoyable and not the same as buying capability.
Care
Plastic moulds scratch, and a scratch is somewhere organisms live that you cannot scrub. Retire scratched ones rather than working around them.
Wooden hoops and boards can’t be sterilised — which is fine, because in a cave wood is part of the ecosystem, but it means cleaning them properly and regularly rather than sanitising them.
And boil your muslin, don’t launder it with detergent.
