The Make, Step by Step

Every rennet cheese in this section follows the same sequence. What changes between a gouda and a Parmigiano is the settings — how fine, how hot, how hard, how long — not the steps.

This is the universal walkthrough. Individual families adjust it, and the Makes wing says how — one page per family, with the settings.

0. Before you start

Sanitise everything that will touch milk or curd. You are about to create ideal growth conditions and then walk away for months; the organisms present at the start are the ones that get that opportunity.

Get the milk right. Not ultra-pasteurised — UHT will not form a proper rennet gel. Add calcium chloride if you’re using shop milk, to replace the soluble calcium pasteurisation shifted out.

Read the whole recipe first, and note which numbers are instructions and which are estimates. Reading a cheese recipe is the short version: believe the pH, the temperature, the rennet strength and the salt percentage; treat every duration as somebody else’s measurement.

1. Warm the milk

Bring it to the recipe’s ripening temperature — gently, ideally in a water bath. Direct heat scorches, and scorched milk is a flavour you cannot remove.

2. Add the culture, and ripen

Sprinkle the culture on the surface, let it rehydrate a minute, then stir it through thoroughly.

Then wait. The culture is producing acid, and that acid — not the clock — is what you’re waiting for. The recipe’s “45 minutes” is its author’s estimate for their milk in their kitchen.

Check your culture matches your cook temperature. A mesophilic culture in a recipe that cooks hot dies partway through, and acidification simply stops. This ruins more wheels than anything else and the recipe will not warn you.

3. Add the rennet

Dilute it in cool, unchlorinated water immediately before use — chlorine deactivates it, and undiluted rennet hitting one part of the vat sets that part and not the rest.

Stir it in thoroughly but briefly — no more than about a minute.

Then stop stirring completely. The aggregation phase is building a network, and agitation tears it as it forms. Still milk, undisturbed, from here.

4. Wait for the set — and test it properly

Two ways, and the second is better:

The clean break. Slide a knife in at an angle and lift. A ready curd splits along a clean line and the whey filling the split runs clear. An unready curd tears raggedly and the whey is milky.

Flocculation, which is a measurement of your own vat. Watch for the moment the surface first goes faintly grainy — that’s flocculation — and note the minutes since you added rennet. Multiply by the factor the recipe gives (typically 3 to 5, depending on the cheese) and cut then.

The flocculation method works because it measures your milk on this day. A flat “cut at 45 minutes” measures somebody else’s.

5. Cut the curd

Cube size is your moisture dial. Large cubes retain whey and give softer cheese; rice-grain cubes drain hard and give the grating cheeses.

Cut cleanly, in single strokes, with a knife long enough to reach the bottom. Sawing tears the curd, and torn curd sheds fat and fines into the whey — visible as whey going cloudy and white instead of yellowish-green. That’s yield leaving the vat and you won’t get it back.

6. Heal — the step people skip

Stop. Wait three to five minutes. Don’t stir.

Freshly cut faces are raw network. Given a few minutes undisturbed they heal — a skin of knitted protein forms across each face, tough enough to survive being stirred. Agitate before that and you shatter the cubes into fines and lose them.

This costs five minutes and is invisible when skipped, right up until the yield comes up short.

7. Stir, and cook

Stir gently and continuously so the cubes stay separate and whey keeps escaping. Gently means: keep them moving, don’t knock them together. They toughen as they lose water, so you can be firmer later than at the start.

Then cook, if the recipe says to — slowly. Something like a degree every few minutes. Fast heating firms the outside of each cube before its interior has drained, sealing it — which shows up months later as an unevenly ripened cheese with a pasty core.

The top temperature is not negotiable. It sets how much moisture leaves and which bacteria survive.

8. Wash the curd, if this is that kind of cheese

Replace some whey with warm water. You are removing lactose, so the bacteria make less acid, so the final pH is higher, so more calcium stays bound — giving a sweeter, springier, more elastic cheese.

That’s gouda, edam, Colby and company, and it is the single clearest demonstration that these settings are real levers.

9. Drain

Let the whey off. How completely, and how warm you keep the curd while you do it, both matter.

Save the whey. It’s still hot, it still has 20% of the milk’s protein in it, and ricotta is free.

10. Cheddar, if this is a cheddar

The outlier step: cut the drained curd into slabs and stack, turn and re-stack them for an hour or more while they stay warm and keep acidifying. The texture transforms into something layered and fibrous. Then mill it and salt the curd directly.

11. Salt

Three routes: on the curd before pressing (cheddar), on the surface of a formed wheel, or in brine.

If the recipe gives a percentage of curd weight, weigh the curd and hit it. Salt is not seasoning here — it’s the brake on ripening, and under-salting doesn’t taste bland, it lets the cheese over-acidify and go wrong.

🔴 If you’re brining: put calcium in the brine. 0.1–0.3% calcium chloride, commonly 0.25% = 2.5 g/litre, and bring the brine to about pH 5.0. A calcium-free brine pulls calcium out of your cheese and the surface goes soft and slimy. This is the defect people meet, blame on their technique, and never diagnose.

12. Mould and press

Fill the mould, fit the follower, and press to a ramp — light first, heavier later — flipping between stages.

And remember that the recipe’s pounds are meaningless without its mould diameter. What matters is pressure, and the arithmetic is on the presses page — including the fact that 10 PSI on a 6-inch follower is 283 pounds.

13. Dry the surface

Before waxing or before the cave, let the wheel air-dry until the surface is touch-dry — usually a day or two, turning it. A wet surface waxed over is a mould farm you can’t see, and a wet surface in a cave takes smoke, rind organisms and everything else unevenly.

14. Finish, and age

Wax, bandage, or leave it to form a natural rindeach trades away something different.

Then into the cave at low fifties and about 90% humidity, with a gentle breeze, and turn it regularly. The numbers are here; my two ways of holding them are a rebuilt fridge and a room in the basement.

15. Write it down

The step that improves your cheesemaking more than any piece of equipment.

Record what you actually did — the milk, the volume, the temperatures you actually hit, the times, the pH readings, the weights, the press schedule, and then what the cheese was like at one month, three, six. Mary Karlin’s book ships forms for exactly this and I ignored that advice for far too long.

Because the whole argument of this section is that four ingredients and a dial means changing one variable on purpose — and you cannot change one variable if you don’t know what the last setting was.
