Fresh Cheeses
This is where nearly everybody starts, including me — my first two cheeses were a vinegar mozzarella and a cottage cheese, and both were startlingly good for how little they asked.
It’s also the family the rest of this section keeps quietly deferring to, because it sits on the other side of the first fork: these are acid-set, not rennet-set, and that one fact determines everything else about them.
What makes a fresh cheese
Acid coagulation. Add vinegar or lemon or let the milk’s own bacteria make lactic acid, and at casein’s isoelectric point of pH 4.6 the micelles lose their charge and drop out as a precipitate — clumps, not a network.
Which means, unavoidably:
- They don’t stretch. No continuous protein structure to draw into fibres.
- They don’t melt properly. They soften and weep, or they just sit there.
- They don’t age. Nothing is happening except spoilage. Days, not months.
- And they’re high-moisture, which is why they’re soft and why they’re perishable.
None of that is a deficiency. It’s a different material, and it’s a material a lot of the world’s best eating is made of.
A caveat on the boundary: several cheeses in this family are made with a little rennet alongside the acid, or with heat as well — and a few, like ricotta, aren’t really acid-set casein cheeses at all but heat-acid ones that recruit the whey proteins. The members
Cottage cheese. Curd cut, drained, and usually dressed with cream. I make it two ways — with vinegar and with lemon juice — and they are genuinely different cheeses, which is why they’re separate recipes rather than a variation. The lemon version is brighter and rounder; the vinegar version is cleaner and sharper.
Quark and fromage blanc. Northern European and French respectively, both essentially drained sour milk, both smooth rather than curdy. Quark is a staple of German baking; fromage blanc is the base of a lot of French cooking.
Cream cheese. Made from cream as well as milk, usually with a stabiliser in the commercial version, which is why supermarket cream cheese behaves differently in a cheesecake than a homemade one.
Mascarpone. Cream acidified — usually with tartaric or citric acid — and drained. Very high fat, barely a cheese by some definitions, and the reason tiramisu works.
Chèvre. Fresh goat cheese, typically lactic-set over a long slow acidification rather than a quick acid dump. The tang is the goat milk’s fatty-acid profile as much as the acid.
Queso fresco and queso blanco. The Latin American fresh cheeses — mild, salty, crumbly, and crucially they hold their shape when heated rather than melting, which is exactly the high-pH, high-calcium behaviour that makes them good for frying and for crumbling over hot food.
Paneer. Heat-acid, pressed firm, doesn’t melt. Whose origins are genuinely unresolved between three competing accounts.
Farmer’s cheese. A catch-all for pressed, drained fresh curd — firmer than cottage cheese, drier than quark.
Labneh. Strained yoghurt rather than a curdled milk, so a different route to the same place: acid from fermentation, water removed by draining.
Mozzarella, the quick kind. Milk, acid, salt, no rennet. This is a real cheese and a good one, but it is not the same material as a cultured pasta filata mozzarella, and the difference isn’t skill — it’s structural.
Why they’re worth taking seriously
Two arguments, and the second is the one I’d press.
They are the best possible entry point. You get a result in an afternoon, from a gallon of milk and something acidic. There is no equipment barrier, no culture to keep alive, no cave, no waiting. Whatever else this section says about presses and controllers and eight-month wheels, this is where somebody should start, and if they never go further they’ll still be eating well.
And they are probably the oldest branch of the craft. The oldest datable cheesemaking artefact is a strainer, and a strainer is precisely what an acid-set curd needs. Souring is free and automatic; rennet requires you to have killed a young animal recently. For most of human history the fresh cheese was not the beginner’s version — it was the cheese.
I spent years thinking my vinegar mozzarella was the shortcut I did before I got serious. It was the older thing.
Making them
The universal method is close to trivial: heat the milk, add acid, wait for the curd to separate, strain, salt. What varies is temperature, which acid, how long you drain, and whether you press.
Three things worth knowing:
- The acid changes the flavour, not just the pH. Vinegar, lemon and citric acid taste different in the finished cheese. That’s a lever, and it’s the one I pulled first when I swapped plain flake salt for smoked.
- Drain time is the texture dial. Same curd, ten minutes versus two hours, is the difference between a spoonable cheese and a sliceable one.
- Salt at the end and taste it, since unlike an aged cheese there’s no ripening period during which a salting error becomes something else.
