Salting & Brining
The science page explains what salt does — draws water, brakes the bacteria, hardens the surface, changes how casein holds water. This page is how to actually apply it, and the three routes are not interchangeable.
The salt itself
Non-iodised, no anti-caking agents. Iodine is antimicrobial and you are relying on microbes; the anti-caking agents are inert but cloud a brine.
Flake salt is what I use — it’s what went into my first mozzarella, and swapping it for smoked flake salt is the change that got me properly hooked.
Coarse or fine matters mainly for dry-salting: fine dissolves fast and evenly, coarse takes longer and can sit undissolved on a surface.
Route 1 — Dry salting the curd
Salt mixed directly into milled curd before pressing. The cheddar method, and unusual.
Why it’s good: the salt is inside from the start, so distribution is the most even of any route, and there’s no waiting for diffusion.
How much: a percentage of curd weight — typically in the region of 1.5–2.5% depending on style, and this is exactly the number a recipe should give you. Weigh the curd. “Sprinkle with salt” is asking you to guess at one of the two variables that decide the whole outcome.
The technique: scatter in two or three additions, mixing between, rather than all at once. Salt draws whey immediately, and one big dose in one spot gives you a salty patch and a bland one.
And work quickly, because the curd is cooling and it needs to still knit under the press.
Route 2 — Dry salting the surface
Salt rubbed onto a formed wheel, repeated over several days. Traditional for many natural-rind and washed-rind cheeses.
Why it’s good: it builds a firm, dry, hostile surface, which is exactly what a natural rind needs to establish on. And it gives you a gradient — saltier outside, milder within — which some cheeses want.
The technique: rub, then turn the wheel and do the other face next time. Expect it to weep for the first days, and expect to repeat it several times.
The failure: uneven application gives uneven ripening, since salt is a brake and you’ll have areas running at different speeds.
Route 3 — Brining
Floating the wheel in salt solution. Standard for gouda, alpine cheeses, mozzarella, feta and the whole brined family.
Why it’s good: it’s even, it’s hands-off, it’s easy to time, and for the brined cheeses the brine is the aging environment.
🔴 And it has a trap that damages cheese
Make a plain saturated salt brine with no calcium in it and the brine will pull calcium out of your cheese until equilibrium — like pulling the mortar out of a brick wall — and the surface will go soft and slimy.
The brine recipe, therefore:
- Near-saturated non-iodised salt
- 0.1–0.3% calcium chloride, commonly 0.25% = 2.5 g per litre
- Acidified to about pH 5.0, near the cheese’s own — a pH mismatch causes the same defect independently
- Cooled to cave or fridge temperature before the cheese goes in

Timing
Brining time scales with wheel size and shape, not just recipe hours, because salt has to diffuse inward. A thick wheel needs proportionally longer than a thin one of the same weight.
Wheels float, so the top surface sits above the brine and gets no salt. Either sprinkle dry salt on the exposed face, or turn the wheel partway through, or weight it under.
And expect it to keep getting saltier after it comes out, as what’s on the surface continues moving inward. Under-salt slightly rather than over-salt; you cannot take it back out.
How much salt, in the end
The honest answer is that it varies by style over a wide range, and the recipe should tell you. What’s worth internalising is the direction of the errors:
Under-salted doesn’t taste bland — it over-acidifies and over-ripens. The brake is off. You get pasty or crumbly texture, off flavours, and a cheese that goes wrong rather than tasting mild.
Over-salted is a flavour problem and a stalled ripening problem: you’ve braked so hard the cheese never develops. Also, for a Swiss, excess salt suppresses the propionibacteria and you get no eyes.
Neither is recoverable, which is why this is a weigh-it-don’t-guess-it step.
The short version
Non-iodised salt. If the recipe gives a percentage, weigh the curd. Dry-salt in two or three additions, not one. If you brine, put 0.25% calcium chloride in it and bring it to pH 5.0. Under-salt rather than over-salt — and remember the floating wheel’s top face.
