“East Asia has no cheese” is wrong, and — more usefully — the reason everybody gives for it is wrong too, in a way that inverts the actual logic.
This page covers East and Southeast Asia together, because the plan gave the region one slot and because the thing worth saying runs across both.
🔴 The lactose-intolerance explanation is backwards
The standard account: East Asians are largely lactase non-persistent, therefore they didn’t drink milk, therefore no cheese.
Cheesemaking is what a lactose-intolerant population does with milk. That is not a clever inversion; it is the mainstream reading of the earliest evidence, and it is already on the origins page: Peter Bogucki, co-author of the Nature paper on the Neolithic Polish sieves, put it directly — “Making cheese allowed them to reduce the lactose content of milk, and we know that at that time, most of the humans were not tolerant to lactose.”
Draining curd from whey removes most of the lactose. Fermentation consumes more of it. An aged cheese has essentially none. The people who invented cheese in Neolithic Europe could not drink milk either.
So lactase non-persistence cannot be the explanation, because it did not stop anybody else. And the 2022 Evershed study further weakens the whole causal chain — in around half a million UK Biobank Europeans, LP genotype is “only weakly associated with milk consumption.”
What actually explains the pattern is agriculture, not genetics: intensive wet-rice and vegetable farming in dense settled populations leaves little land for dairy animals, and pigs and poultry convert scraps far more efficiently than a cow converts pasture. Where East Asia did have grazing land and herding peoples — Yunnan, Mongolia, Tibet — it has real cheese, which is exactly what that explanation predicts and the genetic one doesn’t.
⭐⭐ And the region has the world’s densest concentration of non-animal coagulants
Here is the fact that reframed this page for me.
Every cheese below is set with something that is not a calf’s stomach:

The rennet page discusses cardoon, fig sap and safflower as the historical alternatives, and Spain showed that cardoon is a far better coagulant than “plant rennet” implies. This region should be on that page too, and it is the strongest evidence yet for the wing’s running claim: using a ruminant’s stomach is a European habit, not a definition of cheese.
⚠ Worth noting papaya turns up twice, doing two different jobs — as an acid treatment in rushan and as the enzyme papain in dangke. I have not found a source that reconciles those two descriptions, so I am reporting them as each source states them rather than assuming one is a loose description of the other.
⭐ Rushan — “milk fan,” and the cheese that stretches and dries
Rushan (乳扇) is made by the Bai people of Yunnan, from cow’s milk.
⭐ The formula is written — Cheese, Rushan (Milk Fan) — and it closes the papaya question flagged above: 木瓜 names both Chinese quince and papaya, and rushan’s acid is the quince.
The process, as the literature lists it: heating, papaya-derived-acid treating, coagulating, squeezing, rubbing, shelling, and drying. In practice: fresh curds are pulled and stretched into thin sheets, then wrapped around long bamboo sticks and hung up until they are yellow and leather-dry.
It is eaten toasted, deep-fried, or rolled with rose jam and sugar.
⭐ This is pasta filata — and then dried. Which puts it in a club with exactly one other cheese in this entire wing: Georgia’s tenili, which is pulled into threads, dried, then creamed and potted.
Everywhere else, stretched-curd cheeses are eaten fresh (mozzarella) or aged as a solid mass (caciocavallo, kashkaval, provolone). Two traditions, five thousand kilometres apart, independently discovered that you can stretch a curd thin and then dry it — and neither is mentioned in any book on my shelf.
Rubing, and a coagulant made from a vine
Rubing (乳饼) is a firm fresh goat’s-milk cheese from Yunnan, made by the Bai and Sani peoples. Heated goat’s milk is mixed with a souring agent — traditionally năiténg, made from a cultivated vine.
It is sliced and fried, often sprinkled with sugar, and it doesn’t melt — the same calcium-cross-link story as paneer, halloumi and kalari. China has a deep-fried cheese, and almost nobody outside Yunnan knows it.
A vine-derived coagulant is the entry on this page I most want a primary source for, and I haven’t found one that identifies the plant. Recorded as a gap rather than guessed at.
⭐ Dangke — pressed into a coconut shell
From Enrekang Regency, South Sulawesi, Indonesia. Fresh buffalo or cow milk is curdled with papaya leaf juice, which contains the enzyme papain, and the curd is pressed into coconut shells.
Two things there.
Papain as a coagulant is a genuinely different tool from cardoon’s cardosins — a cysteine protease rather than an aspartic one — and it belongs alongside cardoon and Calotropis on the rennet page.
And the coconut shell is a mould. Add it to the list: carved wooden spindles in the Tatras, reed baskets, clay pots, fir-bark cylinders — and half a coconut. The shape of a regional cheese is usually whatever container the region had lying around, which is worth remembering the next time a book insists a cheese must be a particular size.
Kesong puti (Philippines) is the same idea one archipelago over: carabao (water buffalo) milk from Laguna, Bulacan and Cebu, coagulated with vinegar or rennet, and wrapped in banana leaves that give it a faint grassy aroma. Leaves again.
The rest
Nai lao and the Beijing milk-curd desserts — set, sweetened milk curds of Manchu and Mongol descent, and a reminder that northern China’s dairy tradition arrived with steppe peoples rather than being absent.
Mongolia and Tibet are covered on the Caucasus and Central Asia page, where dried curd — aaruul, qurut, chhurpi — turns out to be the most portable and shelf-stable dairy food anyone has made.
Japan has no indigenous cheese in the European sense, but it does have so (蘇), a Nara-period reduced-milk solid recorded in early court documents and reconstructed in recent years — which, if the reconstructions are right, is structurally the same idea as Indian khoa and brunost: concentration by heat, no coagulant. ⚠ Reported; I have not verified the reconstruction against a primary source. Modern Japanese cheesemaking is real and good and entirely twentieth-century, centred on Hokkaido.
Korea’s cheese industry is conventionally traced to Imsil in the 1960s, founded with the help of a European missionary priest. ⚠ Also reported rather than verified here; the detail varies between accounts and I have not pinned it down.
What to take to the bench
⭐ Papain is on my shelf already — it is sold as meat tenderiser, and it is the same enzyme. Setting a small batch of milk with it is a genuinely cheap experiment and would tell me more about what a coagulant actually does than reading another chapter would. ⚠ Expect it to behave badly in an aged cheese for the reasons the rennet page gives — broad proteases and long ripening don’t mix — so this is a fresh-cheese experiment by design.
Rushan is the technique I find most tempting and least likely to manage: stretching curd into a sheet thin enough to dry on a stick is a skill, not a recipe. But stretching a curd and then drying it is an idea I had never encountered, and a small ugly version would still teach me something.
And frying is underrated as a use. Rubing, kalari, paneer, halloumi, kesong puti — five traditions independently arrived at a cheese you cook in a pan without it collapsing, and my own kit has made exactly one of them.
